Summer berries and lime cream cheese topped with toasted walnuts and vanilla sponge
Use small tumblers or large shot glasses200g or 1½ cups of fresh strawberries cut into 1/4s
Add the lightly whipped cream and sour cream together folding gently then add the lime juice and zest.
Start by placing the redcurrants into the base then the raspberries and the strawberries then add the cream mixture followed by the vanilla sponge and toasted nuts. Top with a raspberry and mint sprig.
This can be prepared up to 3 hours in advance.
