Summer berries and lime cream cheese topped with toasted walnuts and vanilla sponge


Serves 6

Use small tumblers or large shot glasses

200g or 1½ cups of fresh strawberries cut into 1/4s
100g or ¾ cup fresh raspberries whole washed
100g or ¾ cup fresh red currants washed
50g or ¼ cup of toasted crushed walnuts
50g or ¾ cup of crumbed vanilla sponge
20g or 6 sprigs of fresh mint
Cream Mix
200ml double cream lightly whipped
40g sour cream
½ a lime juiced
1 lime zested

Add the lightly whipped cream and sour cream together folding gently then add the lime juice and zest.

Start by placing the redcurrants into the base then the raspberries and the strawberries then add the cream mixture followed by the vanilla sponge and toasted nuts. Top with a raspberry and mint sprig.

This can be prepared up to 3 hours in advance.
