Apple and cranberry pickle


Serves 4

Preparation time 15 minutes

Red onion 3mm slice - 100g
Dried cranberries - 100g
Granny Smith apples - 200g
Raisins - 50g
Red currant jelly - 70g
Black pepper - 1g
Salt - 2g
Cider 100ml
Raspberry vinegar

1. Sweat off the onions and cranberries and dice the apple

2. Add all the remaining ingredients and cook until tender

3. Cool and use as required. Great for pork of beef dishes
