Pan fried Haloumi with Apple Relish
Thinly slice the onion and sweat off for around 5 minutes until they turn opaque. Add the caster sugar, spices and seeds, followed by the apples and apple juice. Cook until the apples are soft in texture but not mushy. Remove from the heat and allow to cool. Cut the haloumi into slabs about 1cm thick then fry in a hot pan and lightly season with salt and pepper. Serve on fresh rocket and top with your blue poppy and wattle seed apple relish.
